In conjunction with Merdeka, Nobu Kuala Lumpur puts a Malaysian spin on its latest creation: 14 Flavours by Nobu Omakase, available from 1 – 31 August 2020.
Inspired by the stripes on the Jalur Gemilang, the Omakase comprises 14 dishes spread over a filling eight-course meal. Though each dish may not represent individual states, Nobu Kuala Lumpur has taken great care in incorporating Malaysian flavours to curate this Omakase. The thoughtful selection of ingredients both spotlights the best of Japanese-Peruvian cuisine while offering locals new gastronomical viewpoints on familiar favourites.
“As an Ipoh-born, I took inspiration from Malaysia’s wide array of local delicacies and sought to infuse them into this Omakase. The aim was to strike a balance in staying true to our Japanese-Peruvian roots while introducing a few locally inspired dishes that push the envelope. It was a collaborative process that got the whole kitchen and sushi bar team excited because it’s for a day that means so much to us,” shares Executive Chef Philip Leong, the driving force behind Nobu KL.
14 Flavours by Nobu Omakase is more than a celebration of the nation’s freedom, but also a celebration of the nation’s solidarity in joining arms to overcome the challenges of life during a pandemic. The menu kicks off with a mouth-watering classic, Nobu Moriawase. The selection begins with a buttery Kampachi complemented by a sharp karashi-su miso topped with caviar. The Botan Ebi with Uni follows, a composition of juicy shrimp with a serving of Uni – a delicacy sometimes referred to as sea urchin roe – that melts in your mouth.
Next, a fresh serving of Tuna Tataki Jalapeno Dressing scintillates taste buds with the sweet zest of pineapple salsa alongside crispy shiitake that pulls flavours together with an umami edge. Afterwards, Head Sushi Chef Chico prepares the Chef’s Sushi Selection, a handpicked assortment of sushi with a satisfying range of taste, texture, and creaminess.
The artful presentation of dragon fruit dry miso harkens to a luxury take on rojak, a fruit salad dish, offering a suitable pair to the delicate textures of Seared Scallop with Wasabi Salsa that packs a piquant punch.
At the midway point, a refreshing Tomato Sorbet cleanses the palate in preparation for the following courses.
Snow crab, a prized Asian seafood delicacy, makes its way to the table in Nobu’s delicious twist on Chilli Crab – presenting succulent crab meat gracefully ensconced in a tangy serving of spicy-sour egg sauce.
For the meat aficionados, the Short Rib topped with Cacao Truffle Miso promises to steal the show. Made from locally produced chocolate sourced from Alor Gajah, the sauce envelops tender braised beef full of smoky, chargrilled flavour.
A nostalgic nod to sticky rice dumplings follows as the Unagi Chimaki arrives wrapped in a traditional bamboo leaf. The steamed rice is pleasantly aromatic, with the nuttiness of water chestnuts enhancing the salty eel.
Finally, Ryugan (Longan) Kakigori completes the meal. A sweet, refreshing dessert of shaved ice inspired by Sweet Lotus Seed Soup, the kakigori is made with persimmons and green kelp, topped with a serving of creamy monk fruit sorbet.
