The tantalising Johorean Lobster Briyani Gam returns to the menu of Bangsar’s popular lobster-centric restaurant Pince & Pints for a limited time only, from May 8 till July 9, in celebration of Ramadhan.
The original briyani gam was first introduced in the 1880s by Johor’s first menteri besar, Dato’ Jaafar Muhammad.
However, for this Lobster Briyani Gam, the recipe is given a crustacean twist in the shape of a whole lobster air-flown from Canada, paired with perfectly cooked basmati rice with potatoes, hard-boiled eggs, sauces and pickled vegetables, known as acar rampai.
Hours of hard work are put into the preparation daily at the restaurant to ensure you get only the freshest of meal. The acar rampai is made of carrots, shallots, cucumbers and chillies, while the basmati rice is infused with precious herbs such as saffron. On top of that, the hard-boiled eggs and potatoes are fried to attain a crunchy texture, which are then mixed in the cooked biryani gam gravy. As for the latter, it is fine tuned to deliver a well-balanced taste; one that is robust without over-powering whilst remaining subtly spicy and veering towards the sweet side without sending the tongue into overdrive. All this is done without purging the lobster of its innate qualities, so you still get to taste the juiciness and the sweetness of its meat.
To wash down the flavours, a bubbly Buzzy Bandung is also available on the menu for a sweet ending.
