Tell us about the first party you’ve ever thrown.
It’s a long time ago but I remember having a birthday party at McDonald’s when I was in primary school. I remember it was such fun and everyone had a good time.
How much time do you need to prepare your party?
I typically start cooking at least a week in advance but some of the bigger parties require at least three months of planning ahead.
What is the craziest thing you’ve seen happen at your parties?
Generally we are quite restrained! We have good music, good food and great company. I enjoy having a good time with people that come to join us!
Favorite champagne to serve?
How about cocktails?
We love whisky so a good Whisky Sour always hits the spot. Otherwise, I make a mean Negroni too!
Were there any instances where things didn’t go as planned? Did things turn around and how?
There was once, we organised a massive durian party and the durians were detained longer than usual at the customs checkpoint. They had been ordered specially from Pahang for the party and had travelled a long way to be here. Luckily the guests were very understanding and with a good dose of humour and some nice champagne, the party carried on and the durians finally arrived.
What menu is always a hit with guests?
Home-cooked food is always heartfelt so I always make it a point to do things myself instead of catering. Guests usually like my sous vide wild caught salmon topped with Ikura , beef rendang, Hokkien prawn mee, and of course, my signature sourdough bread!
What can guests look forward to at your party this year?
Organic turkey, roast wagyu striploin and brown sugar glazed Virginia ham — all cooked from scratch!
Tell us your secrets to throwing a good party.
Relaxed hosts are the main ingredients. After that good food, good wine and have fun with your guests.
Any tips on how to be a great host?
Prepare in advance what you can and have a set of SOPs with whoever is helping you set things up. Don’t be shy to ask for help — putting a meal together with your friends can be a bonding experience! Afterward, just kick back and have fun!
