Pop-ups are a great way for some of our favourite local F&B businesses to show off their creativity with limited edition menus and concepts, as well as collaborate with other businesses for something truly special.
As larger-scale events are still on hold, pop-ups satiate customers’ cravings for new experiences. And, if we’re honest, it’s also just another excuse to grab a couple of drinks at some fantastic bars.
We rounded up three exciting bar pop-ups to check out this week, including one with a beer and grain bowl pairing, and two that take guests on journeys to cities like California and New Delhi without actually leaving the country.
Moonstone Bar x Rice Bowl Boys
Formerly located at 21 Moonstone Lane, Moonstone Bar set up shop along buzzy Amoy Street last year with the concept of a modern community centre, where people from all walks of life come together for good food and events and stay for the conversations. The bar is no stranger to pop-ups and its latest one is a collaboration with another local business, Rice Bowl Boys (RBB), who specialise in hearty grain bowls. Like several other F&B ventures born out of the Circuit Breaker period, RBB does not have a dine-in space but operates online, taking orders for pick up and delivery via Instagram (@ricebowlboys).
At the one-day-only pop-up, customers can dig into RBB’s signature bowls like the Strip Love Bowl, comprising medium-rare striploin slices, a smoked tea egg, almond orange broccoli and some tangy Tropic Thunder Sambal on a bed of fragrant wild mushroom quinoa, while sipping on a cold Moonstone Moon Dog Beer. The tropical lager is infused with juicy flavours of peach, mango and passionfruit juice, which perfectly complements the roasted mangoes and pineapples in the sambal. Another grain bowl and booze pairing to try is the Salmon Trouble Bowl with the Moonstone Brewlander Love, and other bar bites like Roast Pork Belly and Char Siew will also be available.

MO BAR Nomanic Forager Virtual Bar Tour
Travel has always been at the heart of MO BAR’s drink programme. In 2019, the team visited cocktail bars around the region to create a signature menu served for one night only at a special guest shift. Reflecting on those adventures, they then came back to develop MO BAR’s Volume Two menu, which takes guests on a whimsical journey across Asia.
To recreate the experience of travelling in current circumstances, the bar team has launched a Nomadic Forager Virtual Bar Tour in partnership with top bar venues in Southeast Asia. MO BAR will host each of the participating venues for a virtual guest shift in Singapore, offering their signature cocktails for one week at the bar. This week, guests will be able to taste drinks from Irusu Lounge (Ho Chi Minh City, Vietnam) and Galaxy Bar (Dubai, UAE) from 27 August to 2 September, and from ROOM by Le Kief (Taipei, Taiwan) and Sidecar (New Delhi, India) from 3 to 9 September.
At the same time, each participating bar will offer two signature cocktails from MO BAR’s Volume Two menu for a limited time. For a more in-depth exploration of the drinks, interested guests may opt for a live virtual session with MO BAR’s team via a QR code.

Monument Lifestyle Presents Golden State
Chic Duxton café and retail space Monument Lifestyle has been transformed into Golden State – a Californian inspired speakeasy pop-up bar. Running every Friday and Saturday from 6.00 pm to 10.00 pm, guests can enjoy easy-drinking cocktails by renowned bartenders, Paul Hammond of Bulletin Place, Sydney and Priscilla Leong of Junior in Singapore.
Named after famous California landmarks, the cocktails highlight West Coast flavours and local producers such as St. George Spirits from Alameda, California. The menu also showcases fresh California flavours like in The Rose Bowl, which is made with St. George Terrior Gin, raspberry, citrud, ginger and rose, and Enchanted Hill, which is a blend of aperol, passionfruit, Fino and marigold.
Some other drinks to try are the Dante’s View, a refreshing and mildly spicy concoction of St. George Green Chili Vodka, Apple, Citrus, and Roselle, as well as the smoky Devil’s Gate, made of Alipus Mezcal, Beetroot, Cacao and Rooibos. In addition to enjoying the drinks, guests can also while indulging some retail therapy from Monument Lifestyle’s handpicked American menswear labels and accessories.
