1. The St. Regis adds local cuisine to Champagne Brunch
Brasserie Les Saveurs adds a range of local-inspired dishes to its famed Champagne Brunch menu, in celebration of National Day. On top of salads, cold cuts, and fresh seafood on ice, look forward to Peking duck, popiah, and nyonya kueh pie tee live stations; canapés such as wok-fried black pepper Wagyu beef and braised pork belly with lotus leaf bun; and à la carte main courses including pan-seared Atlantic cod with chilli crab sauce, har cheong lamb chop with yam mash, and mussels and scallops in laksa broth.

2. Axis Bar and Lounge serves nostalgic afternoon tea
Get a taste of local flavours without overindulging — pandan ice jelly with coconut emulsion, nasi lemak cornet with anchovies and sambal jam, bandung rosella Bavarois, and chocolate almond kueh pie tee are just four of the 18 items on Axis Bar and Lounge‘s August afternoon tea menu, which works best paired with a selection of TWG teas and a view of Marina Bay.

3. Sample an Italian–Singaporean mash-up at Monti
The second edition of Monti‘s Festino series adds an Italian twist to Singaporean food: We’re looking at chicken rice arancini (stuffed rice balls coated in breadcrumbs and deep-fried), laksa risotto with coconut powder, and gula melaka panna cotta. On the drinks front, look forward to Dino Rock (Milo powder, bourbon, Baileys, Milo-infused syrup, and milk) and Kopi-O-La (local coffee, vodka, crème de cacao Brown, and chocolate bitters); as well as red, white, rosé and moscato wines from Italy and France.

4. Drink local at Nutmeg & Clove
Nutmeg & Clove takes inspiration from William Farguhar’s Natural History Drawings and unveils four cocktails that add a local twist to classics, such as The King and Queen, an adaptation of the Milk Punch, which incorporates durian and mangosteen; and The Galangal Beer reinterprets the Moscow Mule with house-made spiced pear syrup, fresh lime and galangal ginger beer. This National Day menu precedes the bar menu revamp in October that will organise items to highlight aspects of Singapore’s biodiversity.

5. Take in the view at LeVeL33
LeVeL33 serves feasts for the eyes and stomach — tuck into the Singapore Platter (pan-seared coconut brioche with pandan jam, black vinegar roast pork, chicken rice arancini, cereal prawns with lemongrass emulsion, and beef hazelnut satay) with a Singapore Sling on the side, and an unobstructed view of the aerial display and fireworks over Marina Bay.
