When it comes to sustainable farming and culinary experimentation, few are as admirable as Chudaree “Tam” Debhakam.
Better known as Chef Tam, the gastronomic genius behind Baan Tepa had worked at the renowned Jean-Georges, 11 Madison Park, and Blue Hill at Stone Barns, before switching to focus on Thai cuisine after winning Top Chef. Today, you’ll find her at her 12-seat communal restaurant, where she and her team serve up unique interpretations of regional Thai cuisines, drawing from chef Tam’s experiences travelling the country and learning from locals. When asked how she’s managed to succeed in the tough culinary world, she tells us simply that it’s all about knowing how to persevere. “Sometimes you lose track of what you’re doing and what it’s all for, but I think it’s important to step back and think about what your goal really is, and why you’re doing what you’re doing. Just don’t lose track.”
