Long hailed as a staple when it comes to Italian fine-dining, The Sukhothai Bangkok’s La Scala made waves in Bangkok’s dining scene on January by inviting chef Antimo Merone from 8 ½ Otto e Mezzo Bombana Macau. Fast-forward to now, and the Italian restaurant is back with another bang, this time flying in chef Ciccio Sultano of Sicily’s Duomo restaurant for an exclusive five day collaboration with ‘ The Italian Job Vol. 3 ’.
The owner of two-Michelin starred Duomo, chef Ciccio Sultano’s culinary vision stems from historical and cultural influences that have occured over centuries. Dishes are flavourful yet harmonious — exquisite blends of bitter, sweet and salty, often all at once, reflect a mix of cultures and palettes.
What to anticiptate from this collaboration? Chefs Ciccio and David join hands to create both a five course set lunch and a seven course set dinner, paired with fine wines. If you’re visiting for lunch, stimulate your appetite with an aperitivo, with five options that range from green olive stuffed with raffadali pistachio marzipan to langoustine, served with its roe and san cono prickly pear.
For the antipasto, the chefs dish up a delectable serving of mediterranean turbot and winter black truffle — the mains are more filling, including the likes of stuffed sicilian black pork striploin. As expected, there are a couple of creative twists that are sure to raise a brow or two, including the truffle ice cream.
For dinner, the same creative, authentic flavours persist. Antipasti selections start you off with a taste of life’s finer things, from oyster on the hyblean plateau, to a serving of ragusano cheese gnocco, complemented by cuttlefish carbonara, lemon and pistachio. Fill yourself up with a queen’s lasagna, complete with brittany blue lobster, langoustine and squid, followed by a milanese amberjack, served like a meaty pizzaiola.
