Pastry chef Kevin Lee conjures his childhood memory by the Atlantic ocean in France through this refreshing afternoon tea set. Combining savoury and sweet, where guests will be delighted with playful and tasty treats, including a beautiful mother-of-pearl made of toasted coconut, white chocolate and Baileys cream, a cute mango cheesecake with lemon basil syrup in the form of a white and blue swimming ring, along with a gorgeous lemon cone topped with kaffir lime and brined meringue.
Savouries include a smoked salmon and roe cone with horseradish cream, yellowfin tuna tartare wrapped in seaweed, and sustainable Atlantic scallops with lime and dill sauce. Not to forget is a luxurious Avruga caviar—Herring roes which are more sustainable than Sturgeon roes—paired with celery custard.
